Nachos – Everything and the kitchen sink & Gina Cucina Roasted Veggie Chili

 

As the saying goes!  …. Nachos were invented in 1943 when the now legendary maitre d’  Ignacio Anaya, threw them together as a group of tourists entered his restaurant in Piedras Negras, after they had closed for the day.  Not having much of anything left, he tossed down some chips, threw on some cheese and sliced jalapenos – “ Nachos Especiales” came to life for the very first time.  They even have their own day – November 6th is National Nacho Day. Rest assured we will have another nacho recipe for you on that day!

 

Roasted Veggie Chili Nachos

 

1 jar Gina Cucina Roasted Veggie Chili

1 bag Tortilla chips of your choosing

1.5 cups shredded sharp cheese

½ cup sour cream

1 avocado diced

1 tomato diced

4 oz green chilis

 

Place tortillas on a sheet pan – pour Gina Cucina Roasted Veggie Chili on top, add the shredded cheese & green chilis.  Bake at 375 for 20 minutes.

Remove from oven when cheese is melted – top with diced tomatoes, avocado, sour cream and SERVE!!  Enjoy with 4 of your best friends as a lovely appetizer or meal. Nachos are meant to be modified … make them personal.  Add your favorites!! I like to add roasted broccoli and cauliflower!! Much to my families dismay – they want the chili and cheese!
