1 medium zucchini, shredded
1 green apple, shredded
1/4 cup asiago cheese, shredded
1/2 cup flour (GF is fine and GREAT!)
splash of milk (or your favorite milk substitute)
1 tbs fresh thyme, loosely chopped
salt and pepper to taste
Place shredded zucchini, green apple, cheese in a bowl - mix together. Crack in the eggs - one at a time, mixing as you go. Dump in the flour & a splash of milk. The batter should be the consistency of a thick muffin mix. Fold in the thyme, salt & pepper.
Form into patties - you can place them on a buttered griddle over medium-high heat, approximately 4 minutes each side. Or place them in a buttered muffin tin, bake at 375 for 20 minutes, until golden brown.
You can drizzle on some tahini dressing or buttermilk ranch.
