Roasted Artichokes
2 artichokes
1 tbsp Extra Virgin Origin Oil
sea salt to taste
Trim the points off the artichoke leaves and quarter - place in a pressure cooker with an inch of water. Bring to temp and cook for 7-10minutes. Remove from heat - bring down temp, place on the baking dish - drizzle with olive oil and sprinkle with salt. Broil for 3-5 minutes.
I like to use the tahini dressing below to dip in
Tahini Dressing
3 tbs tahini
juice of one lemon
2 tbs water
1 tbs toasted sesame oil
1 tbs tamari
1 tbs grated fresh ginger
Yummy as a snack or as your side vegetable.
