So simple!  So quick! So delicious!  So nutritious! Gina Cucina Curried Butternut Squash One Bowl Wonder came to my attention due to my dear friend and fabulous human being – Gina Caputo.  We did a program together about nutrition and she taught me so very much. The idea is simple and nutritious. Convenience and taste are the names of the game.  We have a One Bowl Wonder Recipe for each of our soups but thought we would start with what we lovingly refer to as our Christmas in a cup, Curried Butternut Squash!

Gina Cucina Curried Butternut Squash One Bowl Wonder

1 Jar Gina Cucina Curried Butternut Squash

1 stalk of broccoli

½ head of cauliflower

1 zucchini

2 cups cooked rice

¼ cup pumpkin seeds

Salt to taste


Wash and cut all vegetables into one-inch pieces.  Steam all vegetables in a saucepan with a ⅓ cup of water, approximately 10 minutes.  Strain and set aside. Warm up Gina Cucina Curried Butternut Squash in the same saucepan over medium heat, approximately 7 minutes.  Place cooked rice and steamed veggies in a bowl and pour all the Curried Butternut Squash Soup over the top. Garnish with pumpkin seeds and salt to taste.   Voila – you have a fabulously simple, quick & delicious meal.
