I like to switch up my rice with this quick recipe. Simple and delicious.
1 head of cauliflower- finely chopped
2 tbsp water
1 tbsp olive oil or butter
1.5 tsp fennel seed
sea salt and pepper to taste. (habanero pepper if you so desire!)
Melt butter over low heat in large frying pan, add in the fennel - let it pop. (habanero happens here too). Toss in the finely chopped cauliflower & water, cover, cook over medium heat for 15 min. Add in the salt and pepper to taste.
Garnish with fresh cilantro or basil - what is your favorite?
