Cauliflower Pizza Crust

Cauliflower Crust Asparagus Pizza

2 heads of cauliflower 
2 eggs
1/2 cup parmesan cheese
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp pepper

Rice the cauliflower in a blender - place on cookie sheet and bake for 15 minutes - using a cheesecloth or linen towel - squeeze out ALL water.  This is VITAL!  Place your cauliflower mash in a bowl and add all other ingredients.  Mix well.  Form your pizza crust onto a flat pan and bake for 20 minutes at 375.  Flip it and bake for a few more minutes.

Add your pizza sauce and the toppings of your choice.  For this one - I chose thinly sliced zucchini, roasted asparagus, a touch of pesto and fresh oregano.  You can make the pizza of your choice!  ENJOY!

This will make 2 pizza crusts.
