“Carnival” Cannellini Bean Sliders with Avocado Buns

1 can drained cannellini beans, mashed

1 bunch asparagus, thinly sliced

1 cup bread crumbs

2 eggs, cracked

½ cup parmesan cheese

¼ cup toasted sunflower seeds

2 tbs lemon juice

1 tbs toasted sesame oil

1 tbs sesame seeds

½ tsp cumin

Sea salt to taste

Dash of Aleppo pepper powder

Sriracha or Chipotle mayonnaise goes nicely as you assemble.  If you so desire.


4 avocados - cut in half

1 cup thinly sliced purple cabbage, soaked in 1 tbs olive oil, 1 tbs lime juice & sea salt to taste

1 onion sliced thinly, caramelized in 1 tbs of butter and 1 tbs of extra virgin olive oil

In large mixing bowl combine mashed cannellini beans, sliced asparagus, bread crumbs, eggs, parmesan cheese, sunflower seeds - hand mix until well combined.  Add in the remaining ingredients- save ½ of the sesame seeds to sprinkle on top . Make slider patties - place on baking sheet. Bake at 375 for 20- 25 minutes.

While baking - you can caramelize your onions, slice and soak your red cabbage - set both aside.  Slice avocado in half and scoop out trying to maintain shape.

Remove sliders from oven and assemble. Sprinkle some sesame seeds on top, drizzle a little tamari - so many delicious choices.  ENJOY!
